A few years back, I set out to perfect the art of the Montreal-style bagel — watering my roots, if you will. What followed were countless bagel brunches, flour-dusted experiments, and many very willing taste-testers. Even the “I-don’t-really-like-bagels” crowd couldn’t resist.
